Have a long week ahead or simple want a grab and go breakfast . Simple and easy . No stoping at a drive thru . Being a stay at home mom with a 2 year old and a 2 month old can be very challenging . So quick and easy is a must for me . Hope you enjoy .
Veggie egg muffin w/bacon
Ingredients :
8 eggs
1/3 green bell peppers
1/3 red bell peppers
1/3 onions
1 Teaspoon of pepper flakes
2 table spoon of chicken bouillon powder (Goya yellow package)
8 slices of bacon (turkey)
Olive oil (spray)
Instructions :
Pre heat oven to 370 .
Spray your muffin pan . Add your bacon to each (around the inside of the muffin. In a shallow deep bowl . Add eggs and seasoning and pepper flakes. Whisk . (Taste) add more seasoning if needed) Then add all veggies . Mix well then pour (not all the way to the top (eggs will rise) . Bake for 10-15 min. (Watch carefully) check to see if it’s cook with a fork or knife ( if it comes out clean then it’s cooked ) it will rise don’t worry it will deflate once it’s cool .
