Who doesn’t love chocolate *Crickets Crickets Crickets* simple cake /cupcake recipe for a very moist and low on calorie cake . Win win right ? Well enjoy my friends!

Easy Mini Chocolate Cakes

For the cupcakes

1 c unsweetened cocoa powder (measured accurately)
¾ c all-purpose flour (measured accurately)
2 tsp baking powder
¼ tsp salt
2 tbsp canola oil
2 eggs, room temperature
1 tbsp vanilla extract
¾ c brown sugar
½ c nonfat milk
3 tablespoon of dark chocolate chips (if desired)

To prepare the cupcakes, preheat the oven to 350°F and place foil cupcake liners in 12 muffin cups. Lightly coat the liners with nonstick cooking spray.

In a medium bowl, whisk together the cocoa powder, flour, baking powder, and salt. In a separate bowl, whisk together the oil, eggs, and vanilla. Stir in the sugar. Alternate between adding the flour mixture and milk, beginning and ending with the flour, and stirring in each until just barely incorporated.Divide the batter between the prepared liners. Bake at 350° for 21 minutes. Cool in the pan for 5 minutes before turning out onto a wire rack to cool completely.

For frosting

1 c unsweetened cocoa powder (measured accurately)
½ c honey or agave
2 tsp vanilla extract
8-10 tsp nonfat milk

To prepare the frosting, add the cocoa powder, honey or agave, vanilla, and 8 teaspoons of milk to a medium bowl. Stir until smooth. If the consistency is too thick for you , continue stirring in the remaining milk until the desired consistency is achieved. Spread when cakes are cool.

Easy Breakfast Sandwich

I have to admit I’m not a breakfast person . Since I started my weight lost Journey breakfast is the most important meal of the day . I’m always on the go. So for breakfast I like to make something EASY , (literally really easy ) My morning usually start by hubby yanking me out of my bed (not really ) he works night shift so he’s usually really to catch he’s Zzzz . Now I’m up so I hurry and brush my teeth , wash my face , and diaper change the kiddies . My husband has fed faith already (my daughter) when he gets home from work . At this point I’m pretty much alert but starving . Some how around this time faith is always yanking on my pajama pants asking me for veggie tales or doc mc muffins and my son is screaming his lungs out I guess he learned that he can make talk he’s (5months) ugh the life of a stay at home mother … Crazy but I love it . This breakfast literally took 8 min !!!!!!!! Yes correct 8 min .. I love it . I honestly think it was less but with all the screaming and my daughter being so spoil I don’t think I estimated right . Maybe 5 min . Well I honestly hope you enjoy this easy breakfast because this is my now go to breakfast sandwich !! Till I come up with something tasty and satisfying . Not to mention nutritious !

Ingredients

2 eggs
2 slices of whole wheat bread
Pinch of salt /pepper
2 slices of organic turkey breast
1/2 of watercress or kale
1/2 tablespoon of olive oil
1 table spoon of shredded mozzarella

Instruction

Add oil to skillet , slice turkey , once skillet is hot add turkey , whisk eggs with salt and pepper , add to skillet , cook then sprinkle with cheese. Toast bread . And build your sandwich with watercress and eggs .

No Bread Burger

Delicious portabella burger . I want to consume less crabs and what better way when craving burgers !! This recipe is delicious !!!! Yummy !!!

Great recipe for having friends over .

Portabella Turkey Burger w/creamy Avocado Sauce

Ingredients (4 burgers)

1 pound of ground turkey
8 Portabella mushrooms (if cooking for (4)
1 1/2 teaspoon of salt
1 tablespoon of pepper flakes
1/3 cup of chopped white onion
3 tablespoon of freshly chopped parsley
1 tablespoon of chili powder
2 clove of chopped garlic if you wish
1/2 of small avocado
1 teaspoon of honey
1teaspoon of rice vinegar
1 teaspoon of Dijon mustard
2 tablespoon of oil
Lettuce

Instruction :

Add , onions , garlic , parsley , chili , salt to turkey and mix well. Make four burger patties and set aside.

Avocado sauce : slice avocado into cubes , add rice vinegar , honey , Dijon mustard whisk and set aside .

Set oven on low on broil . Wash mushrooms . Dry . Drizzle olive oil over . And add dash of salt over them . Add to oven for two min each side . You can grill if you choose .

Cook patties till cook about 8 min each side depending on size of the patties . Once cook remove from stove . Dress portabella with avocado sauce add your topping of choice and serve !!! enjoy !!!

Sesame Chicken Wings

Easy simple recipe.

“Sesame Chicken Wings “

1 Tablespoon of rice vinegar
4 tablespoon of worshire sauce
3 Tablespoon of honey
2 Clove of minced gralic
1 Stalk of green onion (chopped)
1 tablespoon of chilli sauce
2 Tablespoon of freshly peeled and minced ginger
2 Tablespoon of sesame seeds
2 teaspoon of salt

Marinate for 45 min

Bake for 35 min on 360

Remove and Drain

Bake for another 10 min

Add remainding sauce and add sesame seeds and green onions . Watch video on YouTube.com/bellameals

Popsicle Smoothie

Strawberry pineapple Popsicle smoothie
1 1/2 of pineapple juice 100%
3 table spoons of vanilla Greek yogurt
4 large strawberries (sliced)
1/2 tablespoon of stevia (optional)

Instructions:

Mash strawberries with fork (roughly) you still want chunks. Add strawberries to pineapple juice and also add yogurt. Whisk . Then add to Popsicle container . Freeze over night . Watch video on YouTube.com/bellameals

“Chocolate Pancake”

“Chocolate pancakes made with almond flour drizzled with white chocolate sauce “

1/2 cup of almond flour
1/2 tablespoon of 100% coco powder
1/2 teaspoon of salt
1/2 teaspoon of baking powder
1 teaspoon of stevia
1 teaspoon of vanilla extract
1/4 of a cup of skim milk or 1% milk
1 whole egg
Nonstick spray

Instructions.

Mix all dry ingredients . Then add wet ingredients to dry ingredients . Spray skillet . Add batter (3 tablespoon) eye it and once it starts bubbling flip. Top with any topping of your choice .

I used white chocolate sauce . (Not so healthy but what the heck right 🙂

1/2 cup of white chocolate
1 tablespoon of almond milk
1 tablespoon of organic condensed milk

Melt chocolate . Add milk and condensed milk . Mix and drizzle over pancakes . Visit Bellameals

Ladies and Gents, Woah I don’t even know where to begin . Well let me start off by saying thank you for the awesome support..

I’ve been dreading to tell my story.. Why you say ?!? Well I like to keep some things to myself at times , but if I want my viewers/followers to know who I am and why I do what I do well I have to share a part of me with you right ?

Well for starters I’m a mother of two beautiful children and a wife to the worlds most awesome husband . Some say that I am a women with many talents I say I’m just driven . From making jewelry , dabbling in make up & creating recipes . I’m a women that is driven . Trying out new things is so exciting to me . May I mention I get bored easily. Something must always stimulate my mind at all times .

Growing up I was the trouble maker out of all my siblings there is actually 7 of us (believe it or not lol) from detentions , suspensions to write ups yup I was one of those disrespectful , talking back students . I mean I wasn’t so terrible right ?!?? Till this day I cant seem to figure out why was I so stubborn . I guess you can call it (teenage syndrome) since society has a label for everything , as I grew older I became wiser and my attitude changed. But I still had a little sass in me .. “Rolls eyes” & “shakes head” but I wasn’t the same . At the age of 15 I was baptized . At the time I wasn’t ready but I’m glad that I am baptized . I believe at that time I did it for my mother since that’s all she spoked about , but I still new I wanted to be baptized. Something in me told me I wasn’t doing it for the right reasons . But I believe that Christ sees my heart and know that I accept him as lord and savior. I am a believer . Christ has changed my life tremendously . Life has a new meaning since I accepted Christ .

At a young age (20) I married my wonderful husband. We will soon celebrate our fourth year of marriage this year. Honestly marriage was the last thing on mind at that age (or was it even on my mind) well to say the lease I was giving my husband well fiancé at the time a very hard time . I really didn’t think this guy could be this serious , at the time my husband was 28 years old and I always thought what did he want with little ol me . What can I offer you ? Well he was Interested in the women I am . He knew I was going to be his wife but I was being so in denial with that being said we married August 14 of 2011 one of the best day of my life . As a couple we prepared ourselves for marriage , like saving and getting counseled etc and praying together . We vowed to God to stay pure before marriage and with God grace and help we did lol ….y’all know how hot and intense these emotions can get right. Can I keep it real ? 🙂 well to continue we had no clue how marriage can be this much work . Well our mother and Pastors told us but I mean we didn’t know it can be that hard (right?) Our first year of marriage was so hard. We honestly felt like giving up . After seeking counseling and much prayer our marriage started to get better and thing started to get smoother. I can honestly say that God is the reason , remembering our vow to God kept us going. Now marriage is a breeze I am not saying its easy , but I am saying that we understand each other and communicate better now .

This year so far has been great for me .. I am learning about my new talents when it comes to food and creating new recipes. My mother always kept me in the kitchen (I use to hate it) she would wake me up at 5 in the morning to get sunday dinner ready … so I despised cooking when I was younger. But I always cooked and always try to do my best . 2012 I had my frist child and after giving birth I was huge I mean I blew up from a size 155 to 235 yes I know HUGE . I began eating healthy and started working out and went down to 183 almost down to pre baby weight but not quit there yet. My daughter was still one when I became pregnant again (just a few months away from being 2). I didn’t gain as much weight with son this time. After having my son I was determined to get back into shape like never before and actually look better than before. So I began creating healthy recipes. Cooking was a hobby to now being a passion. Healthy meals has helped me loose a total of 20 pounds in 2 1/2 months .The passion for cooking has encouraged me to help others eat healthier and inspire them to cook more often and to also show you that eating healthy does not have to be hard . And also encourage you to create delicious recipes that’s not boring and tasteless.

So thank you for following my journey and taking the time to read about the women behind the meals . I am here to encourage you to take care of your body and health . Lets not feed it with junk and give our bodies the nutrition that it actually needs.

S.N SQUEEZE LIME JUICE OVER SHRIMP AND RINSE BEFORE SEASONING.

For Shrimp:

2 Tablespoon of chili Powder
2 Tablespoon of Parsley
3 Tablespoon of Mr.Dash Extra Spicy
3 Tablespoon of Raw Honey
1 Cup of Cooked Bulgur Wheat

For Pasta:

1/3 cup organic Lime and Garlic Dressing
3 Tablespoon of Chopped Green Pepper
2 Tablespoon or Chopped Red Onion
1 cup of cooked Trio Pasta

Almond xoxo Pancake

Woke up this morning and was craving pancakes … I’m not a pancake fan but for some reason I had the crave . What better way then to make my own and a healthier way . So I whipped together a simple recipe for almond pancakes . Subscribe to my YouTube channel youtube.com/bellameals

1/3 cup of almond flour
1/3 wheat flour
1/3 skim milk
1 teaspoon of baking powder
1 egg
Pinch of salt
1 teaspoon of stevia sugar
1 1/2 teaspoon of almond extract

Mix. And pour in cookie cutter heart shaped . When it stars to bubble up and cook remove from cookie cutter and flip ..

I topped this with cinnamon sugar and strawberries .

Chipotle Black Bean Salad

Very simple recipe
1 can of organic low sodium black clean (or boil 1 cup)
1/2 of corn (already cooked)
1 small tomato (chopped)
1/2 red onion (chopped)
1/2 green onion
1 tablespoon of olive oil
2 tablespoon of chipotle seasoning
1 teaspoon of salt
1 teaspoon of vinegar
You can add Parsley if you wish

Instructions

Toss everything together !!! Add cheese if you wish when finish ! Hope you enjoy
